what will bork that amount of disks? power surge or similar frying a backplane with drives attached? Or maybe disk failures cauding raid 5 rebuild, and losing more disks during rebuild itself?

I would say that that's the garbage collection and verification tasks on the datastore - they smash CPU and I/O.

FYI it works well, I've been using it on Debian base with 512mb ram (installed via Proxmox's official repos) since beta with no problems at all.
