Thanks for the really interesting writeup! A bit more recently certbot got nginx support added so you don't have to restart it for it to start using the certificates after renewal, so it's fully automated. I think you just have to pass --nginx when running the certificate request.

Maybe a better way to think about this would be to flip it on it's head. Set up a dedi and give yourself the resources you want running Proxmox or similar. It would cost a lot more money but it'll be exactly what you want/need.

I literally could not give two shits if the UI looks like it is from 1996. If the product is reliable and quick and the UI does what it needs to do, then I see no problems. You don't need to have a GUI refresh every 2 years for your product to work well.
